POTATO VEGETABLE CHOWDER
(for a large family and leftovers)


5 regular/small potatoes (any variety), peeled and chopped

1 cup organic corn

3 individual stalks of celery, sliced

2 sliced green onions

1 cup coconut milk

5 cups veggie broth

1-2 cloves minced garlic

2 tbsp organic soy sauce

Iodized sea salt to taste (if none in broth)

A few dashes of Cayenne and black pepper (optional)

juice of 1 lemon for tartness (optional)

Chop and peel potatoes > Fill large pot with all ingredients except for soy sauce, green onions and lemon juice >
Bring to a boil, reduce heat and cover, simmering about 15 min. > Add sliced green onions and simmer another
few minutes > Remove from heat and add soy sauce and lemon juice. > A little added steamed rice is good with it also
and you can just replace any of it with your favorite veggies that work well together :D
